Selim's tasting notes
Nose: Hazelnut cake, soft mustard, gunpowder, oranges, copper coins, earth.
Palate: Pecans, walnuts, glazed chestnuts, gunpowder, bits of tobacco, sweet BBQ sauce.
Finish: Oily but sharp with sweet spices and tobacco.
Ed's review
Colour: Natural, light amber, or pale burnished gold. Coats my glass, with beads that form slowly.
Nose: Stewed apples in a butterscotch and vanilla sauce with grated orange peel on top. Dry roasted and salted nuts. Black peppercorns. Floral, with fragrant hay in the summer.
Palate: Medium to full mouthfeel. Mixed dry roasted nuts. A gentle sweetness and a fresher green note bring greengages to my mind - with vanilla cream. A little spice, but tempered with aromatic sweetness (I can see where Selim gets BBQ sauce from).
Finish: Long finish with gingernut biscuits, vanilla and a touch of warming spice.
Overall: Another delicious dram from Selim - great quality spirit, aged in a great cask.
About this Chapter 7 Whisky
Tomintoul takes its name from the highest village nearby the distillery. Built in the 1960s, it started to gain recognition not long ago with Angus Dundee Distillers releases. Chapter 7 Whisky was very pleased to find this single Amontillado cask finished Tomintoul. Amontillado is a variety of sherry characterised by being darker than fino but lighter than oloroso. Amontillado cask whiskies are rather unusual because the Amontillado casks themselves can be hard to come by. A properly seasoned Amontillado cask takes around 10 years to achieve.
